Method

Preparation
  1. Preheat your oven to 450°F (232°C) for crispy chicken skin.
  2. In a 9x13 oven-safe casserole dish, toss the halved new potatoes and sliced carrots with 1 tablespoon of olive oil and 1/4 teaspoon of salt.
  3. Place the chicken quarters on top of the vegetables.
  4. In a small bowl, whisk together the marinade: Combine the grainy Dijon mustard, additional 2 tablespoons of olive oil, balsamic vinegar, maple syrup, garlic powder, dried thyme, and 1/2 teaspoon of salt.
  5. Pour the marinade over the chicken and vegetables, ensuring everything is evenly coated.
Cooking
  1. Roast in the oven for 45-50 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  2. After 30 minutes, check on your chicken; if the skin is browning too quickly, cover the dish with aluminum foil.

Notes

Let the chicken sit at room temperature for about 30 minutes before roasting for more even cooking. Adjust the cooking time based on the size of your chicken pieces. Feel free to experiment with different herbs or spices.
