Ingredients
Method
Preparation
- Start by cutting the chicken breast into bite-sized chunks.
- In a large mixing bowl, combine the paprika, ground cumin, garam masala, ground turmeric, yogurt, tomato purée, garlic purée, ground ginger, salt, and black pepper.
- Squeeze in the juice of the lemon and give it a good stir.
- For an extra pop of color, add a dash of red food coloring if desired.
Marinating
- Add the chicken chunks to the marinade, ensuring they are well coated.
- Let this marinate for at least 30 minutes; for deeper flavor, refrigerate it for a couple of hours or overnight.
Cooking
- Preheat your air fryer to 200°C (390°F).
- Thread the marinated chicken pieces onto skewers, leaving a little space between each piece.
- Place the skewers in the air fryer basket, ensuring they are not overcrowded.
- Cook for 17 minutes, flipping halfway through for an even crisp on all sides.
Making the Dip
- In a blender, combine the fat-free yogurt, juice of both limes, fresh mint leaves, and a pinch of salt and pepper.
- Blend until smooth to create a refreshing accompaniment to your chicken skewers.
Serving
- Once the chicken is cooked, remove the skewers from the air fryer.
- Serve hot with the yogurt dip, roti, and pilau rice for a complete meal.
Notes
For the best flavor, try to marinate the chicken overnight. You can add vegetables to the skewers for extra nutrients and color. Always check that the chicken is cooked through, reaching an internal temperature of 75°C (165°F).
