Method

Preparation
  1. Preheat the air fryer to high heat (240°C).
  2. Dice the salmon into medium-sized cubes and season with salt.
  3. In a bowl, mix mango chutney and chipotle paste until well combined. Pour this mixture over the salmon.
Cooking
  1. Place the salmon in the air fryer and cook for 6-8 minutes, spooning any extra marinade over the fish as it cooks.
Slaw Preparation
  1. Thinly slice the Hispi cabbage and red onion. Toss with salt, lime juice, and chopped dill.
  2. Slice the Scotch Bonnet chili and season with salt and lime juice.
Assembly
  1. Heat the corn tortillas according to package instructions.
  2. Once cooked, flake the salmon and assemble the tacos with a tortilla base, layering on sour cream, salmon, slaw, sliced chili, spring onions, and radishes.
Serving
  1. Enjoy the tacos hot, mixing and matching toppings as desired.

Notes

For best flavor, marinate the salmon in the glaze a few hours before cooking. Serve with a crisp green salad or seasoned rice.
