Method
Preparation
- Using a sharp knife, carefully cut around the base of each chicken drumstick to remove the skin and tendons.
- Push the meat upwards to create a 'lollipop' shape, trimming any excess.
Marinating
- If desired, mix your marinade ingredients together and cover the chicken.
- Allow them to marinate for at least 2 hours, or overnight.
Seasoning
- Pat the drumsticks dry with paper towels to help the seasoning stick.
- Lightly coat them with olive oil.
- Combine kosher salt, black pepper, garlic powder, and smoked paprika in a small bowl.
- Generously apply the spice mixture over each chicken lollipop.
Smoking
- Set your smoker to 250°F and choose a mild wood like cherry or apple.
- Arrange the chicken lollipops on the smoker grate, ensuring they do not touch.
- Smoke for 90 minutes to 2 hours, or until the internal temperature reaches 165°F.
- Increase the grill temperature to 425°F to crisp the skin and caramelize the sauce.
Glazing
- In a saucepan over medium heat, mix BBQ sauce, honey, and melted butter until smooth.
- Dip each lollipop into the glaze ensuring even coating.
- Return them to the smoker for an additional 15-20 minutes to set the glaze.
Serving
- Use a meat thermometer to check if the internal temperature reaches 175°F to 180°F.
- Remove the lollipops and allow them to rest for 5-10 minutes before serving.
Notes
Experiment with flavors by tweaking spices and trying different glazes. Pair with sides like coleslaw, rolls, and dipping sauces.
