  • 1 large egg Acts as a binding agent, helping to create that perfect texture.
  • 1 teaspoon vanilla extract Its warm and inviting aroma enhances the overall flavor profile.
  • 1 Tablespoon shredded coconut Adds a delightful chew and further enhances the coconut flavor.

  • 1/2 teaspoon baking soda Helps the cookies rise slightly.
  • 1/4 teaspoon salt Enhances all the flavors beautifully.
Mix-ins
  • 1/2 cup chocolate chips Adds melty pockets of sweetness.

Method

Prepping the Oven and Baking Sheet
  1. Preheat your oven to 375°F (190°C).
  2. Line a baking sheet with parchment paper or a silicone mat.
Mixing Ingredients
  1. In a large bowl, combine the softened coconut oil and pure maple syrup. Whisk until creamy.
  2. Add the egg, vanilla extract, and shredded coconut, whisking until fully combined.
  3. In a separate bowl, stir together almond flour (or almond meal), baking soda, and salt.
  4. Gradually add the flour mixture to your wet ingredients and stir until combined.
  5. Gently fold in the chocolate chips.
Baking the Cookies
  1. Scoop the cookie dough onto your prepared cookie sheet, spacing them about two inches apart.
  2. Press down slightly on each dough ball with your fingers.
  3. Bake for 8-9 minutes, until edges are golden brown.
  4. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack.

Notes

Letting the cookies cool on the baking sheet allows them to firm up slightly. Customize with nuts, dried fruit, or different types of chocolate chips. Chill the dough if it feels warm and hard to work with.
