Preparation
- Warm a saucepan over medium heat and add diced apples, brown sugar, cinnamon, nutmeg, allspice, ginger, salt, vanilla extract, and unsalted butter. Stir to coat apples.
- Cook for about 5 minutes until apples are slightly softened.
- Add cornstarch slurry to thicken, remove from heat and let cool slightly.
Assembly and Baking
- Preheat oven to 375°F. Line a baking sheet with parchment paper.
- Roll out the pie crust on a floured surface, cut into circles for the bottom and top layers.
- Place half of the dough circles on the baking sheet, spoon apple filling onto each.
- Cut slits in the remaining dough circles for steam, place over filling, and seal edges with a fork.
- Whisk together beaten egg and milk (or cream or water) for egg wash and brush on top.
- Sprinkle coarse brown sugar on top, then bake for 20-25 minutes until golden brown.
Notes
Add lemon juice to the filling for brightness. Experiment with different apples for varied flavors. Keep an eye on baking to prevent over-browning.
