  • 1 cup shredded cheddar cheese Classic topping for tacos.
  • 1 cup sour cream Offers cool creaminess.
  • 1 cup salsa or pico de gallo Perfect finishing touch.

Method

Preparation
  1. In a small bowl, combine the chili powder, paprika, cumin, garlic powder, salt, black pepper, and dried oregano. Whisk together until evenly mixed and set aside.
Marination
  1. In a casserole dish, add the chicken along with olive oil, lime juice, and the spice blend. Rub the marinade over the chicken to coat. Cover with plastic wrap and refrigerate for 30 minutes to 24 hours.
Cooking
  1. Prepare a grill pan or grill grates over medium-high heat. Lightly grease the cooking surface and place the marinated chicken on the grill.
  2. Cook for about 5-7 minutes on one side, then flip and grill another 5-7 minutes, or until the internal temperature reaches 165°F (75°C).
Assembling Tacos
  1. Once cooked, remove chicken from the grill and let it rest on a cutting board.
  2. Warm the tortillas over the grill or in a skillet for 10-15 seconds per side until slightly charred.
  3. Dice the rested chicken into bite-sized pieces. Squeeze fresh lime juice over the chicken pieces.
  4. Place chicken onto warmed tortillas and add shredded lettuce, diced onions, cheddar cheese, sour cream, and salsa.
Serving
  1. Fold the tortillas, take a bite, and enjoy your High Protein Chicken Tacos!

Notes

For best flavor, consider marinating the chicken overnight. Use a grill basket for easy cleanup if cooking thinner pieces of chicken. Add chipotle chili powder for a smoky flavor.
