Ingredients

Vegetables
  • 1 large red capsicum (bell pepper) Sweet and juicy, cut into vibrant slices.
  • 1 red onion Peeled and cut into 12 wedges.
  • 1 large eggplant Sliced vertically into 1/2 cm (1/5") slices.
  • 3 zucchini Sliced vertically into thin pieces.
  • 3 squash Sliced into thin pieces.
For the Yoghurt Sauce
  • 1/2 cup Greek yoghurt Creamy and tangy.
  • 1/2 clove garlic Crushed.
  • 1/2 tsp cumin powder Warm spice.
  • 1 squeeze lemon juice For brightness.
Seasonings and Garnish
  • Olive oil For drizzling.
  • Salt and pepper To taste.
  • Parsley or coriander leaves For garnish.
  • Lemon wedges For garnish.
  • Extra pinch of cumin For garnish.

Method

Preparation
  1. In a bowl, combine the Greek yoghurt, crushed garlic, cumin powder, squeeze of lemon juice, salt, and pepper. Mix until smooth and set aside in the fridge.
  2. Preheat your outdoor grill to high on one side, or heat a heavy-based pan on high heat.
  3. Drizzle olive oil across the grill or frying pan, ensuring even coverage.
Grilling
  1. Place the sliced vegetables on the hot surface, cooking until charred on one side—about 1.5 to 2 minutes. Turn them over and grill the other side for another 1.5 minutes.
  2. Remove the vegetables from the heat, transfer to a bowl, and sprinkle with salt and pepper.
  3. Repeat the grilling process with the remaining vegetables, layering them in the bowl with additional seasoning. Cover the bowl and let cool to room temperature.
  4. If preparing ahead, transfer the vegetables to the fridge but bring them back to room temperature before serving.
Serving
  1. Arrange the grilled vegetables beautifully on a platter. Drizzle with olive oil and garnish with fresh parsley or coriander leaves and lemon wedges.
  2. Serve with the creamy yoghurt sauce on the side, garnished with an extra pinch of cumin powder.

Notes

Adjust grilling time as necessary based on grill temperature. Marinate vegetables for added flavor. Feel free to add other seasonal vegetables.
