Ingredients

For the Marinade
  • 1 Cup Soy sauce Adds a rich, salty depth.
  • 1 Head Garlic (peeled and smashed) Provides a fragrant aroma.
  • 1 small Onion Elevates the dish's flavor profile.
  • 2 Lemons Adds bright acidity.
  • 1/2 Cup 7-Up (soda) Tenderizes the meat.
  • 1 Tsp Ground black pepper Adds a touch of spice.
  • 5 Tbs Dark Brown sugar Creates delicious caramelization.
  • 1 Cup Ketchup Provides a rich and tangy base.
For the Chicken
  • 2 lbs Chicken thighs (or chicken breasts deboned, skin removed) Opt for juicy pieces for tenderness.

Method

Preparation
  1. In a large bowl, combine the soy sauce, smashed garlic, chopped onion, fresh lemon juice, 7-UP, ground black pepper, dark brown sugar, and ketchup. Whisk the mixture thoroughly to ensure all ingredients dissolve and blend well.
  2. Debone the chicken thighs or breasts, removing the skin. Cut the meat into 2-inch squares for easy threading onto skewers.
  3. Take your chicken pieces and place them in a container or ziplock bag. Pour the marinade over the chicken, ensuring all pieces are well coated. Seal and refrigerate for a minimum of 4 hours, or up to 24 hours for the best flavor.
  4. Soak wooden skewers in water for 30 minutes to one hour before grilling.
  5. Thread the marinated chicken onto the soaked wooden skewers, packing them tightly for even cooking.
Cooking
  1. Preheat your grill to medium-high heat. Grill the skewers until seared on one side, then turn to cook the other side. Ensure the chicken reaches an internal temperature of 165 degrees Fahrenheit.
  2. If desired sear is reached but chicken is not fully cooked, move to indirect heat until done.
  3. Once cooked, remove the skewers from the grill and let them rest for about 5 minutes.

Notes

Marinate for at least 12 hours for deeper flavors. Consider adding bell peppers or cherry tomatoes to the skewers. Can substitute chicken with shrimp or firm tofu.
