Ingredients

Main Ingredients
  • 1 lb boneless skinless chicken thighs Roughly 4 thighs
  • 3/4 cup BBQ sauce Separated into 1/2 cup for marinade and 1/4 cup for grilling
  • 1/4 cup mild oil (such as avocado oil) Brings richness and helps create a sear
  • 1 tsp kosher salt Preferably Diamond Crystal brand

Method

Preparation
  1. In a liquid measuring cup, combine 1/2 cup of BBQ sauce and 1/4 cup of oil. Add the kosher salt and whisk until well incorporated. Set aside.
  2. Place the chicken thighs in a resealable bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is coated. If using a bag, press out the air and seal it.
  3. Refrigerate for 1 to 2 hours, flipping halfway through.
Cooking
  1. Preheat the grill to medium heat, aiming for temperatures of 375-400°F.
  2. Remove the chicken from the marinade and place it on the grill. Grill for 6 minutes.
  3. Flip each thigh, brush approximately 1/2 tablespoon of reserved BBQ sauce onto the cooked side, and grill for an additional 3 minutes.
  4. Check the internal temperature using a meat thermometer; remove the chicken once it reaches 165°F.
  5. Let the chicken rest for 5 minutes before serving.

Notes

For extra flavor, add spices like garlic powder or paprika to the marinade. Marinating overnight enhances flavor infusion. Always ensure that the chicken reaches an internal temperature of 165°F for safety.
