Preparation
- Cut the chicken thigh into bite-sized pieces.
- Sprinkle chicken with salt, pepper, and potato starch. Mix until evenly coated.
Cooking
- Heat oil in a frying pan over medium heat. Add chicken skin-side down and fry for about 4 minutes until skin is crispy.
- Flip the chicken and fry for another 2 minutes.
- In a bowl, mix soy sauce, sake, mirin, sugar, garlic, and dashi stock. Pour into the pan.
- Cook until the sauce thickens to a syrup-like consistency and coat chicken pieces thoroughly.
Assembly
- Prepare the cooked rice in serving bowls, leaving space for toppings.
- Top the rice with shredded cabbage.
- Place the flavorful chicken on top, allowing flavors to mingle.
- Garnish with green onions, mayonnaise, nori, chili threads, and soft-boiled eggs.
Notes
For extra crispy skin, avoid overcrowding the pan. Customize toppings with radishes or sesame seeds as desired.
