Ingredients

For the Grilled Cheese
  • 4 pieces red onions, sliced thin
  • 4 tablespoons salted butter for caramelizing onions
  • 4-6 slices hearty white bread
  • 3 cups shredded Gruyere cheese
  • 1 teaspoon sugar to enhance sweetness of onions
For the Dipping Broth
  • 2 tablespoons salted butter for the broth
  • 2 tablespoons all-purpose flour to thicken broth
  • 1/3 cup sherry wine or substitute with grape juice for a non-alcoholic option
  • 1 can beef broth (14.5oz can)
  • 1/2 teaspoon dried thyme leaves
  • 1/4 teaspoon pepper

Method

Caramelizing the Onions
  1. In a Dutch oven, melt 4 tablespoons of salted butter over medium heat.
  2. Add the sliced red onions and sprinkle with a teaspoon of sugar.
  3. Cook them over medium heat, alternating between medium and medium-low to prevent burning, stirring occasionally.
  4. Cook for about 35 minutes or until caramelized. Season with a bit of salt and set aside.
Preparing the Dipping Broth
  1. In the same Dutch oven, add 2 tablespoons of butter to deglaze the pot.
  2. Whisk in 2 tablespoons of flour to form a roux.
  3. Gradually add the dried thyme, sherry or grape juice, beef broth, and black pepper, stirring to combine.
  4. Heat the mixture over medium heat for 3-5 minutes until slightly thickened. Pour into a bowl and set aside.
Making the Grilled Cheese
  1. Butter each side of the bread slices and place them in a pan over medium heat.
  2. Cook until the first side is golden brown, then flip and add cheese and caramelized onions.
  3. Top with another slice of bread and toast until the cheese is melted and the bread is crispy.
  4. Slice each sandwich in half and serve with the warm dipping broth.

Notes

Enhance flavor by adding a touch of garlic while caramelizing the onions. For an extra cheesy experience, consider adding grated parmesan on top of the Gruyere.
