Method

Preparation
  1. Chop the shrimp into very small pieces, ensuring most pieces are about ¼-inch for even texture.
  2. In a medium bowl, combine the chopped shrimp with the rest of the ingredients from flour to black pepper. Mix well until everything is incorporated.
  3. Chill the mixed shrimp batter in the refrigerator for at least 30 minutes.
Cooking
  1. Preheat a large skillet over medium-low heat and add just enough oil to lightly coat the surface.
  2. Drop a small amount (2-4 tablespoons) of the shrimp mixture into the hot skillet. Flatten it into a patty and cook for 3-4 minutes until golden brown.
  3. Carefully flip the fritter and press slightly. Cook on the other side for another 3-4 minutes until fully cooked.
  4. Place the finished fritters on a plate lined with paper towels to absorb excess oil.
  5. Let the fritters cool for a few minutes and serve warm with your favorite dip.

Notes

Choose fresh shrimp if possible, and make sure to chill the mixture to help the fritters hold their shape. You can also prepare the mixture a day in advance.
