Ingredients

For the Hash Browns
  • 1 lb potatoes (approximately two large, creamy potatoes are ideal) Peel and shred before using.
  • 2.5 tbsp oil Used to achieve a crispy exterior.
  • 8 oz sausage Quality sausage, removed from casings.
  • 3/4 cup grated cheddar cheese Can substitute with other melting cheese (avoid mozzarella).
  • 1/2 cup sliced scallions/shallots Include both green and white parts for added flavor.
  • 1 pc egg Acts as a binding agent.
  • 1/4 cup flour Helps hold everything together.
  • pepper To taste, for added spice.

Method

Preparation
  1. Peel and shred the potatoes using a box grater.
  2. Rinse the shredded potatoes in a colander under cold water until the water runs clear to remove excess starch.
  3. Shake off excess water and transfer potatoes to a clean tea towel. Bundle tightly and squeeze out as much moisture as possible.
  4. Heat 1/2 tablespoon of oil in a skillet over high heat and add the sausage, breaking it apart as it cooks.
  5. Once browned, combine the sausage with shredded potatoes in a mixing bowl and add cheddar cheese, scallions, egg, flour, and pepper. Mix thoroughly.
Cooking
  1. Wipe the skillet clean and heat the remaining 1 tablespoon of oil over medium-high heat.
  2. Take 1/4 cup of the potato mixture and place it in the skillet, patting down to achieve about 8mm thickness. Repeat until the skillet is full, avoiding overcrowding.
  3. Cook each hash brown for approximately 3 minutes or until deep golden brown; gently flip and cook the other side until crispy.
  4. Transfer cooked hash browns to a cooling rack to maintain crispiness, and keep warm in a low oven if necessary.
  5. Serve hot, garnished with additional scallions or shallots if desired.

Notes

Ensure potatoes are dry after squeezing in the towel for crispy results. Try different cheese types for flavor variations. Spicy options can include jalapeños or red pepper flakes. The potato mixture can be prepared in advance and refrigerated.
