  • ½ cup coarsely chopped walnuts
  • ½ cup coarsely chopped blanched almonds
  • 2 teaspoons flaky sea salt Helps enhance sweetness
  • ⅔ cup raw honey or maple syrup Choice of sweetener
  • ⅓ cup ghee or unrefined coconut oil, melted To create a crispy topping
For the Filling
  • 1 large fresh orange, juice and zest Adds a bright, citrusy zing
  • 8 large apples, peeled, cored and chopped into ½-inch cubes Choose apples based on desired sweetness
  • 1 ½ cups fresh cranberries Provides a tangy pop
  • ⅓ cup honey or maple syrup For sweetness
  • 2 tablespoons gluten-free flour or Arrowroot powder For thickening
  • 2 teaspoons ground cinnamon Adds warm, aromatic flavor

Method

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9 x 13-inch baking dish with ghee or coconut oil.
  2. In a large bowl, pour in the freshly squeezed orange juice. Slice apples into ½-inch cubes and toss them in the orange juice as you go.
  3. Incorporate remaining filling ingredients (cranberries, honey or maple syrup, gluten-free flour or Arrowroot powder, and ground cinnamon) into the apples and mix well.
  4. Transfer the filling into the prepared baking dish, cover with parchment paper or aluminum foil, and bake for 20-25 minutes, stirring halfway through.
Make the Topping
  1. In a medium bowl, combine gluten-free rolled oats, walnuts, almonds, flaky sea salt, honey or maple syrup, and melted ghee or coconut oil. Stir until coated.
Final Assembly
  1. Once the filling is done baking, stir it and sprinkle the oat topping evenly over the fruit layer.
  2. Return the dish to the oven and bake uncovered for another 20-25 minutes until topping is golden and bubbly. Watch closely to prevent burning.
  3. Allow to cool slightly before serving.

Notes

Experiment with different types of apples for balance of flavors. For a twist, add shredded coconut to the topping. Drizzle extra honey or maple syrup before serving if desired.
