Preparation
- In a large skillet, over medium heat, add the ground beef. Cook until it’s browned, typically taking around 5-7 minutes. Drain excess fat beyond a few tablespoons but keep a little for flavor.
- Add the chopped onion and bell pepper to the skillet. Cook for about 3-4 minutes, stirring frequently until the vegetables become tender and fragrant.
- Stir in the chopped cabbage along with the can of diced tomatoes and all the seasonings (Tony Chachere's, garlic powder, smoked paprika, black pepper). Cover the skillet and allow to cook for 20-25 minutes, stirring occasionally.
- After cooking, taste and adjust seasoning if necessary.
- Sprinkle the shredded cheddar cheese over the top of the skillet. Cover again, allowing the heat to melt the cheese, which takes about 3-5 minutes.
- Serve and enjoy your Cabbage Roll Skillet alone or with a side of rice.
Notes
For added texture, consider including different vegetables like zucchini or kale. For those who prefer some heat, chopped jalapeños can be added during the sautéing step. For a vegetarian version, substitute ground beef with crumbled tempeh or a plant-based ground meat alternative. Store leftovers in the refrigerator for up to 3 days or freeze for up to 2 months.
