Preparation of Couscous
- In a medium pot, bring 2 ½ cups of water and 1 teaspoon of olive oil to a rolling boil.
- Stir in the couscous, cover, and remove from heat. Allow it to sit for about 5 minutes.
- Fluff with a fork before covering again and setting aside.
Cooking the Lamb and Vegetables
- In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the lamb chunks and brown them on all sides.
- Add the diced onion and bloomed saffron threads along with salt, pepper, ginger, and paprika. Sauté until the onion is translucent.
- Introduce the cubed carrots and your chosen root vegetables. Cook for a couple of minutes.
- Add the zucchini and eggplant chunks. Sauté for an additional two minutes.
- Once the vegetables are slightly tender, add minced parsley and cilantro, tomato sauce, and water or vegetable broth.
- Cook over medium heat, slightly covered, for about 20 minutes, until lamb reaches 145°F.
Final Assembly
- Stir in the drained garbanzo beans and continue to cook until they are warmed through.
- Serve with a scoop of couscous topped with the lamb and vegetable mixture, garnishing with additional cilantro and parsley.
Notes
For added depth of flavor, consider marinating the lamb overnight. Feel free to add more vegetables like bell peppers or spinach. This dish is best served warm.
