Method
Preparation of Apricot Filling
- Simmer the chopped dried apricots, 1 cup sugar, and 1½ cups boiling water in a saucepan for 15 to 20 minutes until the mixture thickens to a jam-like consistency.
- Alternatively, use about 2½ cups of high-quality apricot jam for a quicker option.
Making the Crumble
- In a large mixing bowl, sift together the flour, ¾ cup sugar, baking powder, dried coconut, and a pinch of salt.
- Cut in the butter until the mixture resembles coarse crumbs.
Assembling the Bars
- Grease a 9 x 13 inch baking pan and press half of the crumble mixture into the bottom.
- Spread the apricot filling evenly over the base crumble.
- Sprinkle the remaining crumble mixture over the filling and press down lightly.
Baking and Serving
- Bake in a preheated oven at 350 degrees F for 40 – 45 minutes, until the top is golden brown.
- Allow to cool completely in the pan, then cut into squares and serve.
Notes
Consider adding chopped almonds or walnuts to the crumble for a nutty flavor. For more coconut flavor, toast the coconut flakes lightly before mixing. Enhance the apricot filling with a splash of lemon juice.
