Ingredients

Main Ingredients
  • 1 cluster small oyster mushroom cluster Creamy and succulent with a velvety texture.
  • 2 tbsp vegetable or olive oil Provides a glossy finish and crispy exterior.
  • 1 tbsp balsamic vinegar Lends sweetness and tang.
  • 2 tsp maple syrup or honey Offers sweetness to balance savory notes.
  • 2 cloves garlic (minced) Adds aromatic flavor.
  • 1 tsp soy sauce Adds umami flavor.

Method

Preparation
  1. In a mixing bowl, whisk together the vegetable oil, balsamic vinegar, maple syrup (or honey), minced garlic, and soy sauce until fully emulsified.
  2. Place the oyster mushroom cluster in a dish and pour the marinade over, ensuring every piece is coated.
  3. Weigh the mushrooms down with a smaller dish and heavy items to promote even flattening. Allow to marinate in the refrigerator for at least 15 minutes.
Cooking
  1. Preheat the air fryer to 180°C (390°F).
  2. Remove the marinated mushroom cluster from the fridge and place it in the air fryer basket, gently pressing down to help flatten.
  3. Cook for 8-10 minutes until the edges are caramelized. Press down on the cluster 2-3 times while cooking for optimal density.
Serving
  1. Carefully lift the mushroom cluster from the air fryer and serve immediately while warm.

Notes

Opt for fresh oyster mushrooms for the best flavor. Add crushed red pepper flakes for an extra kick. Be mindful of cooking time, as air fryers vary in heat distribution. Marinating longer enhances flavors.
